Of course, one of the best parts of carving a pumpkin is roasting the seeds! As you all know, my husband and I put our creativity to the test every year in a pumpkin carving showdown. We were both winners with this pumpkin seed recipe I whipped up!
First I pre-heated the oven to 300 degrees. While it was heating up I rinsed the pumpkin seeds in the sink and dried them off a bit in my hands. Don’t use a paper towel to dry them…they’ll stick!!
Then, I placed the pumpkin seeds in a single layer on a baking sheet and baked them for 30 minutes.
After that, I took them out and tossed them with olive oil, Parmesan cheese, salt, and oregano. Then, I popped those suckers back in the oven and let them roast for another 20 minutes.
Wha-laaaaaaa. You’re all done! Upon first bite Brent said they tasted like Pizza…hence the title of this post. He’s right, they do taste like pizza!
Are you roasting pumpkin seeds this fall? I’d love to hear how you do it! Please share in the comments below!
